Today for Easter I brought a spincach salad that I got from my mom. It was so easy and really good that I know I will be making it again soon. As as much of the Strawberries and Almonds you want. The only change I made was reducing the sugar in the dressing by half. Thanks for the recipe, Mom!
Spinach and Strawberry Salad
Spinach
Strawberries (hulled and quartered)
Almonds (toasted and salted...I just use Almond Accents)
Red onion (optional)
Dressing: one egg yolk
1/2 cup olive oil
1/2 cup sugar
Juice of one lemon
